So, Happy 2017! (I know, it’s February and this is my first post over here for the year. #MyLifeBeLike)
So, something I have wanted to share was some of the things that I eat.
When people find out that I’m eating gluten-free, their response is often what can you eat or that sounds expensive….
But I’m me, and I typically don’t play by the rule book: Eating gluten-free doesn’t have to be a boring strictly berries and twigs (or salad only) diet
& it doesn’t have to put you into crazy debt.
(Also, I’m a straight up FOODIE and I love good tasting food. It makes me happy.)
Here’s what I had for lunch today:
Gluten Free Shredded Chipotle Chicken Wrap (By Ashleigh Marie) You'll Need/What To Do:
– chicken breast, cumin, salt, and pepper, olive oil. Season chicken on both sides (enough cumin to give the chicken a light dusting) & brown chicken on both sides in the olive oil. Add 1 cup of water to the pan to deglaze. Cover and bring to simmer for 5 minutes.Shred and add chicken back to the pan with a 1/4 cup of more water. Add chipotle peppers to pan, breaking apart the peppers (the more you add, the spicier it will be ). Now is the time to taste the chicken and adjust seasoning. Let simmer until ready to serve.
-Brown canned corn in a small skillet with butter.
-Warm canned black beans with butter in the skillet as well (everything’s better with butter 🙂 ).
I added mayo and lettuce to the gluten free wrap, added the chicken, corn, and beans. Wrapped it up and ate very well.
I found all ingredients from Aldi for a really awesome price that didn’t break the bank (along with the Gluten free wraps that I freeze and pull out as needed ).
The chicken can be used for salads, wraps, on its own mixed with rice. It can also be made ahead of time and be frozen for later (Sunday is meal prep night for me.)
